healthy pizza hut 30-Calorie Cauliflower Pizza Bites | Pretty F@*#ing Healthy

Thirty-calorie pizza bites are possible and it's all thanks to cauliflower! This versatile veggie is high in fiber, low in carbs, and rich in omega-3 fatty acids. From mac and cheese to buffalo wings, cauliflower is helping to give your favorite comfort foods a healthy makeover. Let us know your favorite cauliflower recipes below!

Cheesy Cauliflower Pizza Bites

Bake time: 50 minutes
Servings: 12

Ingredients

1/2 a head of cauliflower, chopped
1 egg
1 teaspoon caraway seeds
1/2 teaspoon salt
12 teaspoons marinara sauce
1 cup fat-free mozzarella, grated
8 cherry tomatoes, sliced
2 tablespoons flat-leaf parsley, chopped

1. Add chopped cauliflower to a food processor. Pulse on high for 1 minute or until riced.

2. Microwave cauliflower for 4 minutes. Let sit for 5 minutes, then strain all excess water out of rice cauliflower by using a nut bag.

3. Add cauliflower, egg, and caraway seeds to riced cauliflower. Stir until well combined.

4. Add 12 tin liners to a muffin tin and spray each liner with olive oil spray. Add 1 tablespoon of cauliflower mixture to all liners, patting down with fingers until evenly distributed. Spray top of cauliflower crusts with olive oil spray. Bake cauliflower crusts for 15 minutes at 350°F. Remove from heat.

5. Top crusts evenly with 1 teaspoon of marinara sauce and evenly distribute mozzarella cheese. Bake for 10 minutes at 350°F. Cool for 10 minutes.
