1. CHAPDA CHINTI CHUTNEY
The sight of a column of soldier ants can frighten anyone, but for the tribes of Chhattisgarh, these ants indicate a good meal.
Chapda chinti ki chutney is a dish made of red ants (Curcuma angustifolia) mashed with salt, red chilies and mustard oil. It is usually eaten with stale rice. The tribal elders believe red ants have medicinal properties that can cure common ailments like coughs, colds, stomach infections and strengthen their immune system.

2. SNAILS
The sight of soft, slippery molluscs might be gross for many but for some communities of North-Eastern India, snails are a treat, but the process to prepare them is long. The snails first have to be kept in salt water for at least two to three days. This is to clear the undesirable contents in their digestive system. Then follows thorough washing and cutting, which of course takes hours. Then again, soaking them in salted or plain water for some more hours before one can start the final cooking. The actual cooking is in itself a long, tedious process. Is all that hard work worthwhile??? Definitely! One gets to enjoy a hot steaming snail dish filled with aromatic local spices and herbs.

3. BEE LARVAE
Bees stir fried with bamboo shoots and soya beans, both fermented and served with a hot steaming plate of rice is a favourite meal in parts of North-East India. They say the dish tastes like meat but more interesting is the price of the bees. A handful or a bit more of fresh bee larvae can cost up to 1000 Indian rupees or close to US$ 15.

4. FERMENTED FISH
Ngari (Manipur), Shidal/Seedal (Assam, Tripura), Tungtap (Meghalaya) are different types of fermented fish. It is highly popular in the North-Eastern states of India. Small fresh water fish are tightly packed in big clay urns and left to ferment for many months. The final product is sticky fish with a strong, pungent smell.

5. FERMENTED BAMBOO SHOOT
Baas tenga (Nagaland),Soibum, Soidon, Soidon (Manipur) are different types of fermented bamboo shoot relished by people of some parts of North-East India.
WARNING!! Fermented bamboo shoot preparations are notable for their putrid smell.

6. FERMENTED SOYA BEAN
Hawaizar or Akhuni is soybean boiled over low heat and kept airtight for three to five days. It is normally eaten as chutney mixed with fiery chilies, salt garnished with coriander and local herbs.
The Manipuris make a special dish called chagempomba where the soybean is cooked with broken rice, seasonal leafy vegetables, aromatic herbs and fish.

7. SILKWORMS
Eaten stir-fried or boiled with red chillies and baas tenga or akhuni, silkworms can be found aplenty in the markets of Nagaland. There one can find two varieties of silkworms and a kilo of each cost around 350-400 Indian Rupees a kilo or US$ 4-5.

8. FROGS
Another unusual dish of Nagaland is frog meat cooked with baas tenga or akhuni. Not everyone there eats frogs but those who eat say, ‘frog meat is as tasty and juicy as chicken’.
You can try it for a change though.

9. ROASTED RATS
An unusual evening snack from Ziro Valley, Arunachal Pradesh is roasted rat. After removing the innards of the rats, they are put on skewers to be cooked over a fire. After a thorough roast, they are ready to eat! The men of the valley first poke around to find out where the rats live, set up small fires to smoke them out of their underground tunnel networks, and catch them upon exit.
Some are quite fast, so quick hands are a necessity.

10. DRIED PORK WITH MAGGOTS
Dried in the sun for years and even decades, this vintage pork meat with maggots crawling is a tasty delight in Ziro Valley of Arunachal Pradesh. The villagers savour the maggots or just ignore them! Some remove them before eating… ONLY SOME!!!
